In 2025, the Chablis vineyard delivers a vintage that is both contrasted and particularly promising. Marked by pronounced earliness and demanding climatic conditions, the year stands out for its solid overall quality, the good sanitary state of the grapes, and wines combining freshness, balance and ageing potential. With an estimated harvest of around 300,000 hectolitres, slightly below the five- and ten-year averages, Chablis has returned to volumes more in line with market needs after a severely short 2024 vintage.

A look back at the climatic conditions

The Bourgogne‘ winter of 2025 passed without major excesses, despite a few frost episodes. Budburst, very early from the beginning of April in the warmest sectors, quickly set a sustained pace of vegetative growth, confirming a trend that has now become firmly established in Chablis. A cooler May temporarily slowed vine development, before a rapid and sometimes explosive flowering around 26 May. The remainder of the growing cycle was marked by two significant heatwaves, at the end of June and then between 8 and 18 August, with temperatures approaching 40 °C. These conditions encouraged a natural concentration of the berries, which were smaller and characterised by thicker skins, giving rise to intense aromas and a fine structural backbone. Veraison, observed as early as the first week of July, took place under very good sanitary conditions. Despite a few hailstorms at the end of July affecting certain areas of the Grand Auxerrois, the Chablis vineyard as a whole remained largely unscathed.

Harvesting began very early, from 18 August, confirming the precocity of the vintage. Rainfall in mid-August and again in early September resulted in a more staggered harvest than usual, requiring precise, parcel-by-parcel decisions. While light sorting was sometimes necessary towards the end of the cycle, the grapes were generally brought in in remarkable sanitary condition, with yields consistent with the vineyard’s capacities, around 50 to 55 hl/ha.

On tasting, the 2025 vintage offers bright, harmonious wines. Two profiles emerge, ranging from fresh, fruit-driven expressions supported by structuring acidity, to rounder styles with delicately exotic notes. Despite the summer heat, alcohol levels remain moderate. The first juices show clarity, balance and fine depth, pointing to excellent ageing potential.
After a challenging 2024, Chablis thus rediscovers in 2025 a more serene vintage, reflecting the adaptability and technical mastery of its growers in the face of increasingly demanding weather conditions.
