Elegant in both furnishings and table settings, with long white tablecloths on round tables in a single large dining room. Located in the heart of Modena, Luca Marchini‘s restaurant offers refined cuisine: a guardian of the flavors and recipes of Emilia-Romagna, while also embracing Mediterranean influences, with a style that favors lightness and seeks out textures and flavors that are never ordinary. The goal is to find new balances, built on bold contrasts where cooking techniques become the cornerstone, harmonizing acidity, earthy tones, and creamier elements in a satisfying outcome often enhanced by the use of spirits, creating a convincing palate experience.

The wine pairings are well thought out, effectively designed to contrast or extend the flavors of the dishes. This is evident in an impactful pasta dish, Fusilli Mancini with olive oil and chili, paired with a Valle d’Aosta apple cider. Delicacy, extractions, and engagement come together in what is dubbed the “Cheese Cart,” featuring Pecorino, Primosale, Gorgonzola, smoked cream powder, and gin gel. The Bortolotto bean is a surprising dish, with its rich base and a contrast of crispness and density, where the definition of flavor takes center stage. The restaurant offers two tasting menus, one traditional and one vegetarian, along with a “freehand” menu that captures the chef’s truest expression. The three menus include: “Espressione,” 10 courses for €160, “Un salto nel passato” 9 courses for €130, and “Espressione Vegetariana,” 9 courses for €130.
