We have a nice foam and a champagne with a pretty straw gold color. The nose is intense on fruits such as apple, clementine and pineapple. We perceive a hint of vanilla and toast. It is also vegetal with rosemary, rosemary flower and a hint of wood ash. The mouth is fresh, gourmand with a nice acidity and a very nice balance. We have notes of almond, pineapple, cream and cake batter. The finish is umami with a hint of mushroom. It’s silky and long with a slight pleasant bitterness. The bubbles are fine and contribute to the long, fresh finish. Very nice champagne.
