Laurent & Céline Notton, Chablis Premier Cru, Les Beauregards 2021

The wine has a pale lemon-yellow color with slight green reflections. The nose is aromatic and precise. It offers notes of ripe lemon, candied lemon zest, pomelo, fresh pineapple, ripe apricot, white peach and crushed green apple, as well as elegant floral notes of apple blossom and lime blossom, very fine vanilla and honeyed note, combined with a delicate chalky minerality in the background. On the palate, the wine offers substance and liveliness, but the flavors seem a little closed. The attack is frank, slightly unctuous, the mid-palate and the finish are chiselled, tangy and fresh. The wine expresses notes of ripe yellow lemon, lemon zest, candied lemon, fresh pineapple, fresh apricot, floral touches (acacia, apple blossom), a slight salinity and a touch of crushed green apple background. The finish is lively, with high acidity and elegant floral and herbaceous notes. Good length, a lively and straight wine.
