Domaine Filliantreau, Château Fouquet 2021 – Saumur

The wine has a ruby color of medium intensity. The nose is gourmand,(organic, biodynamic) The wine has a pale ruby color. The nose is closed at first.  After aeration, the wine offers notes of wild strawberry, ripe raspberry, red cherry, blueberry, blackcurrant, bird cherry, as well as lots of flowers (violet, rose, lilac,cornflower) and a touch of wild mint, blackcurrant leaf and licorice in the background. The palate is silky, and offers fleshy fruit and fine roasted notes. We find in particular the flavors of fresh ripe red cherry, roasted red cherry, wild strawberry, raspberry coulis, crushed blackcurrant, as well as a fine floral bouquet (violet, peony, lilac) and a herbaceous touch (mint dried, blackcurrant leaf) and spicy (clove, licorice). The tannins are melted and velvety, and the acidity is supple, but fresh and pleasant. Beautiful persistence, gourmandise and freshness.
