Château Tour Saint Honoré AOP Côtes de Provence 2021

The color of this rosé is pale apricot with pink gold reflections. It is clear and shiny. The first nose is on discreet fruits. After aeration, spicier aroma appears with vanilla and sweet spices. We perceive some very ripe apricots as well as yellow peaches. The whole is gourmand and flourishes more and more by taking a little in temperature. A side of warm blond sand and sandalwood then let express a few yellow flowers like honeysuckle. The attack is fresh with lots of flowers like yellow jasmine and honeysuckle. The acidity is measured and attenuates in the middle of the mouth to give way to a more vinous aspect. A slight bitterness concludes the tasting on citrus fruits with still a bouquet of flowers and some ripening stone fruits. The finish remains discreet on the almond.
