Very nice deep mousse. The bubbles are numerous and quite plump. The color is almost like a Cognac : it’s a very surprising Champagne. It is limpid and shiny. The first nose is intense with candied pineapple but also abricot stone and vanilla apple compote. There is a nice minerality which leads to a salty touch. The second nose is jammy. Nice mirabelle plum and white pepper notes. The attack is fresh. The bubbles are great. We find some spices like saffron but also fruits as mirabelle plum, yellow peach and cherry. The middle of the mouth is smooth. There are floral notes like lemon blossom. We do also have some candied lemon zest notes which are lingering until the discrete finish. It has saffron and cooked apple flavors. The whole has got a nice acidity with a silky texture.
