This Champagne has a beautiful light straw yellow color with pretty dynamic strings of bubbles. The first nose is intense with lovely notes of coffee, baked bread as well as apple and white flowers. The second nose is fresh, we perceive a pleasant icy minerality, almost minty. There are fine hints of mulberry blossom, apple blossom and almond. The palate is round with a savory attack. But, the Champagne is dry with directness during tasting. We find the apple but it is accompanied by green plum, lemon zest as well as delicate floral hints. There is always a minerality present during the tasting. The finish is salivating with a touch of salt and notes of almond.
