Nice mousse and fast bubbles which are going up harmoniously in strings to create a compact crown at the surface. The Champagne has got a nice rose gold color. Limpid and shiny. The first nose is aromatic with lime zest, thyme and brioche aromas. We can feel some umami. Then, with air, we go back to citrus fruits like citron and ripe yuzu. We also have a dried strawberry and plum notes. It’s intense, complex with elegance and nice freshness. The mouth is fresh and velvety with a refreshing acidity. The bubbles are present and nice. There is some mushrooms (shiitake type) with a gorgeous umami, almond, plum but also cherry stone. Little by little the cherry liqueur appears with thyme notes. It’s delicate. The finish is with a lot of ume flavors (japanese plum). Precise.
