The nose is lemony and lively: it expresses notes of lemon zest, lime juice, grapefruit and green apple, combined with a hint of tangy apricot, fresh pineapple and white peach, a lactic touch of lemon yogurt, autolysis (fresh yeast, bread dough), white flowers (chamomile, lily) and a limey, even chalky mineral framework. The palate offers a delicate bitterness of grapefruit on the attack; as well as a tangy framework of fresh citrus (lime zest, crushed lemon), green apple, green plum and crisp apricot, as well as chamomile, linden, a hint of hay, bread dough, fresh yeast and sweet brioche in the background, as well as lemon yogurt. The finish is savory and delicious, with notes of tangy stone fruits (apricot, white peach), a touch of bread dough and butter in the background. The mousse is fine and moderately persistent. A lovely, mouth-watering acidity and a good grapefruit bitterness on the finish.
