The wine has a pale ruby color. The nose offers juiciness in its fruity material and a minty freshness that opens up more after aeration. It expresses aromas of macerated morello cherry (reminiscent of griottines), crushed raspberry, wild strawberry and crushed blackcurrant, which are then complemented by aromas of fresh peppermint, cut rosemary and dried thyme. We also find liquorice, a hint of fried coriander seeds, white pepper, as well as dried rose and lilac. The roasting notes are gourmet and enveloped – we send in particular the aromas of toasted hazelnut and cocoa. The palate is fresh, with a lively, tangy and fruity attack; it expresses notes of fresh red cherry, raspberry, roasted red cherry, dried cranberries and blueberry. On the mid-palate, we find notes of dried wild mint, sweet tobacco, rosemary, as well as lilac, dried rose and bitter chocolate, associated with a gourmet roasted side (chocolate-toasted almond, coffee). Tannins are tight, but not drying, with a solid, fine texture and chewiness. Beautiful salivating acidity and good grapefruit bitterness on the finish. The finish is persistent, complex and gourmand.
