(2025/2026 harvest) The oil has a deep golden color. The aromas are fragrant and fresh, with a dominant touch of fresh eggplant and sliced zucchini. They are followed by herbaceous notes (basil, fresh thyme, even mint) and ripe tomatoes (pineapple tomato, beefsteak tomato), combined with a touch of fresh almond and cashew nut, as well as ripe olive. The palate is silky, with a toasty attack (toasted hazelnut, toasted cashew nut) and a delicate almond bitterness. Then come notes of herb-roasted vegetables (roasted zucchini, pan-fried eggplant), a hint of marinated artichoke, and aromatic herbs (sage, dried basil, dried thyme). The texture is silky and pleasant. A long finish of roasted herb and dried fruit notes. Beautiful concentration and a smooth finish thanks to a pleasant bitterness.
