(bio) The oil has an intense golden hue and is slightly cloudy. On the nose, it offers a velvety texture and notable density, expressing aromas of fresh and roasted tomatoes (cherry tomato, crushed beefsteak tomato, roasted red tomato), fresh and sautéed zucchini with aromatic herbs, a hint of cucumber and fresh eggplant, black olive, olive leaf, and bay leaf. There are also subtle notes of fresh hazelnut and fresh almond. The palate is enveloping, velvety, and fairly concentrated, yet not heavy. The attack reveals the bitterness of artichoke and almond, along with a peppery touch that lingers through the mid-palate but fades on the finish. This gives way to notes of tomato confit, fresh beefsteak tomato, pan-seared zucchini with herbs, grilled eggplant with a hint of bitterness, and olive. It shows good persistence with almond and toasted hazelnut notes and offers excellent flavor intensity.
