The oil has a beautiful, bright golden color. The aromas are intense and vibrant. The dominant notes are vegetal and ripe (with hints of roasted vegetables in the background), yet fresh and slightly acidic. There are aromas of fleshy tomatoes (beefsteak, red vine tomato), ripe olives, as well as fresh aromatic herbs, a touch of fresh almond, and pan-fried zucchini in the background. The palate has a silky and delicate texture, with a pronounced bitterness and peppery touch on the attack, but subtle and well-integrated. Flavors of ripe tomatoes (beefsteak, a hint of roasted red tomato), dried Mediterranean herbs, fresh almond, ripe olive, and pan-fried zucchini are present. There is a beautiful intensity and expression of flavors with a pleasant bitterness and a peppery touch that intensifies in the mid-palate and lingers on the finish.
