(organic) The color of this olive oil is concentrated, lemon yellow, with a light green hue. The aromas are enveloping, textured, with vegetal notes (roasted and fresh), associated with tangy, even slightly herbaceous touches. We find the aromas of fleshy beefsteak tomato, yellow tomato, pineapple tomato, fresh artichoke, fried crunchy zucchini, fresh eggplant, as well as fresh cucumber, fresh almond and green olive. On the palate, this oil is delicate, silky. There are more flavors of roasted vegetables than fresh vegetables, and one of the subtle notes of dried fruits, especially on the persistence. We can particularly smell the notes of fried zucchini, fried eggplant, fleshy beefsteak tomato, roasted red tomato, marinated artichoke, as well as toasted hazelnut in the background and ripe olive. The bitterness is light, reminiscent of toasted almond and appears on the finish, without erasing the other flavors, and accompanied by a peppery touch. The texture is delicate, round and not heavy.
