The oil has a golden color and is slightly cloudy (unfiltered). On the nose, it expresses rich, fruity, even slightly sweet aromas (stone fruits: white peach, a touch of yellow apple), combined with hints of freshly cut zucchini, cucumber, vine tomato, and pineapple tomato. There are also aromas of dried fruit (dried hazelnut, fresh almond, a touch of macadamia nut) and herbs (fresh thyme, a touch of dried mint and basil in the background). The palate has a dense, silky texture and flavors that are quite different from the aromatic profile. The initial taste reveals toasted notes (toasted almond, toasted hazelnut, toasted cashew nut), followed by roasted herbs (roasted thyme and rosemary), dried bay leaf, as well as pan-fried zucchini and herb-roasted eggplant. The bitterness of toasted almond is very delicate and well-integrated. Good persistence of dried fruit and roasted herb notes. A supple, flavorful and gourmand oil.
