Cordella – Montalcino, Tuscany (Italy)

(2025/2026 harvest) The oil has an intense golden color. The nose is subtle, refined, and balanced. It initially expresses aromas of ripe tomatoes (pineapple tomato, plump beefsteak tomato), combined with notes of aromatic herbs, bay leaf, and almond in the background, as well as a touch of olives and citrus. A light hint of toasted hazelnut emerges after a short aeration. The palate offers a subtle and elegant bitterness on the attack, followed by a peppery touch. Fresh ripe tomatoes (beefsteak tomato) are present, along with roasted red tomatoes, roasted bouquet garni, and pan-fried green vegetables (sautéed zucchini, sautéed eggplant). The finish is very long, where the bitterness and a peppery touch are softened by sweeter, more indulgent flavors of toasted dried fruit. The texture is silky and delicate.
