(2025/2026 harvest) The oil has a deep golden color. The nose offers fresh and delicate aromas of ripe tomatoes (crushed beefsteak tomato, yellow tomato), fresh eggplant, fresh zucchini, as well as fresh sweet almond and hazelnut. There is also a fresh touch of cucumber and green olive, with a hint of rosemary, and even white tea and mint. The palate is delicate, with a subtle bitterness (bitter almond) on the attack, which intensifies mid-palate and develops toasty notes (toasted hazelnut, toasted sweet almond) that linger throughout the tasting. There are also notes of sautéed zucchini, roasted tomatoes, and roasted herbs (roasted thyme, rosemary), along with a hint of freshly crushed beefsteak tomato. A fragrant and refined oil.
