The nose is fragrant, aromatic, and ripe, expressing aromas of meaty beefsteak tomato, roasted tomato with herbs (à la Provençale), and freshly cut eggplant, along with a subtle hint of stone fruit (peach), fresh thyme, fresh rosemary, and ripe olive—even a faint floral undertone. On the palate, it is supple, round, and even dense. It opens with the bitterness of almond, artichoke, and grilled eggplant, followed by notes of dried aromatic herbs (rosemary, thyme, bay leaf) and nuances of ripe and herb-roasted tomato. It shows good persistence, maintaining an expressive bitter note of toasted almond and a slight toasted, herbaceous character (aromatic herbs, dried and roasted bouquet garni), finishing with a peppery note. A flavorful, fragrant oil.
