The nose offers notes of roasted vegetables (roasted zucchini, roasted eggplant, roasted beefsteak tomato with Herbes de Provence), combined with hints of fresh hazelnut and toasted almond, and touches of dried rosemary, dried mint, and bay leaf. There is also an underlying hint of marinated artichoke. The palate opens with a slightly bitter note of toasted almond and hints of dried herbs (dried rosemary, dried thyme, hay). Notes of herb-roasted tomato, grilled eggplant, and roasted zucchini also come through. Mid-palate, a slight bitterness and peppery note emerge; while intensifying as the tasting progresses, they remain delicate and well-integrated. An enveloping, supple, and pleasant oil, with a peppery touch that enhances its flavor profile.
