(2025/2026 harvest) The oil has a deep golden color. The aromas are pronounced and expressive, with herbaceous and ripe vegetable notes. One can detect fresh tomatoes (vine tomato, crushed red tomato), fresh zucchini, a hint of eggplant, as well as bay leaf, dried rosemary, and thyme in the background. There are also notes of ripe green olive, a touch of dried fruit (dried almond, dried hazelnut), and a gourmand hint of peach. The palate is textured, silky, and enveloping, yet invigorating, with a toasted almond bitterness that appears on the attack, intensifies in the mid-palate, and becomes a pronounced peppery note towards the finish. Dried Mediterranean herbs (thyme, rosemary, bay leaf), grilled vegetables (zucchini grilled with aromatic herbs, grilled eggplant), and crushed tomatoes are also present. Good persistence, leaning more towards roasted vegetable and crushed tomato flavors than peppery and bitter notes. An expressive and flavorful oil.
