This Champagne has a beautiful golden color with fine bubbles. The nose is intense with notes of cooked banana, vanilla and cooked apple. It’s very yeasty, brioche-like with a cooked lemon aspect and round sweet spices. The second nose opens with a more floral and vegetal or even mushroomy aspect. It is a vinous Champagne with touches of peach and roasted almond. The palate is fresh, intense with notes of lemon and refined juicy apple. We also perceive touches of plum, apple blossom as well as fine hints of candied citron. The effervescence is pleasant. The mid-palate has a slight astringency which gives fullness. The finish is also full of substance, a salivating acidity, a tasty aspect of umami, touches of sweet spices on blond tobacco and stone fruits as well as a fine hint of cherry stone and apricot.
