There is a nice, compact and very persistent foam which reveals fine bubbles and a limpid straw-gold colour. The nose is intense on tangy fruits such as apple, lemon and pear. Little by little more evolved notes appear like honey and fresh walnut. The mouth has a slight bitterness on the attack with again these notes of fresh nuts. We have a vinous side with a little salinity and always a nice freshness. We perceive touches of fruits such as grapes and plum but also a hint of vanilla and light toast. The finish is fine with a light aromatic and umami flavor.
