U Mes U, Larus, Rara Avis Collecció, Pinot Noir – Xarel-lo Brut Nature 2021 – Cava Reserva

(18 months on lees, organic): The cava has a pale lemon yellow color. The nose is expressive, lively and lemony. It initially expresses notes of grated lemon zest, grapefruit, lemon juice and lime zest, combined with hints of crushed green apple, as well as white raspberry, dried wildflowers, linden, a hint of chamomile and hay. After aeration, we find sweet notes of yellow peach, brioche, a hint of vanilla, biscuits and lemon yogurt. The palate is precise and expressive. The attack is tangy, chiseled, with notes of fresh citrus (lemon zest, orange zest, crushed lemon), citrus jam in the background, as well as a hint of yeast, brioche, lemon yogurt and white flowers (dried wildflowers, linden, chamomile). The finish is chiseled, with lively acidity and notes of bitter citrus (grapefruit, lime), as well as green apple. The bubbles are intense, medium in size and moderately persistent.
