(Cabernet Sauvignon) The nose is velvety, textured, concentrated and offers light tertiary notes (tobacco, cigar box), toasted with an expressive touch of chocolate (smoked chocolate, cocoa, roasted cocoa nibs, mint chocolate), sweet spices enveloping and expressive, but integrated, complexity and a very savory side to the nose. The fruits on the nose are very ripe, roasted and offers a hint of jam and prunes in the background (chocolate morello cherry, black plums, very ripe morello cherry, raspberry coulis, wild strawberry), the woody side is delicate and integrated (cedar, hint of toasted and grilled wood, coffee, toasted almond), associated with roasted aromatic herbs (thyme, rosemary). The palate is smooth, enveloping, ample and rich while remaining fresh, thanks to flavors of juicy fresh fruit, very ripe, but not jammy (chocolate morello cherry, fresh morello cherry, black plums, very ripe raspberry, wild strawberry), associated with a chocolatey side (chocolate morello cherry, smoked dark chocolate, mint chocolate), complemented by prunes, toasted wood, coffee, toasted hazelnut, toasted almond, a touch of tobacco, cigar box and cedar. Tannins are very fine, delicate, enveloping, mellow. Richness and freshness on the palate, harmony and perfect control. The acidity is delicious and integrated, supple, but fresh. Long finish with notes of crème de cassis, crushed cassis, infused cassis leaf, vanilla, cinnamon and tonka bean.
