(organic) The wine has a pale lemon yellow color. The first nose offers freshness, tanginess and accuracy, but is a little reserved. We first find airy and tangy notes of grated lemon zest, lemon juice, lime juice and pomelo, associated with notes of green apple, green pear and a herbaceous touch of rose leaf. After aeration, the wine offers notes of stone fruit (white peach, yellow plum, apricot), a lactic hint of natural yogurt, discreet woody notes (fresh wood, fresh hazelnut), as well as a fragrant floral bouquet (lily, apple blossom, apricot blossom) and a touch of fresh quince. The palate offers precision, a distinguished minerality (limestone, a little drying), tanginess of citrus fruits (lemon, lime, lime zest, pomelo), as well as notes of green apple, acacia, apple blossom and lime blossom infusion, combined with a touch of fresh almond. The finish is persistent, chiseled and salivating. It mainly expresses citrus flavors (lime, pomelo), a delicate bitterness, as well as floral and herbaceous notes which reappears at the very end of the palate (acacia, a hint of thyme). Accuracy, straightness and gourmandise.
