After the second fermentation in the bottle, the wine remains on the lees for 16-18 months before disgorging) The wine has a pale lemon yellow colour. On the nose, it offers a distinguished and expressive minerality (limestone, wet stone, saline), associated with the liveliness of citrus fruits (lime, yellow lemon, grapefruit), the gourmandise and juiciness of stone fruits (white peach, apricot), as well as light spicy notes (nutmeg, a hint of vanilla in the background), toasted hazelnut, acacia honey and brioche. The palate is refined and fragrant, chiseled, with tension and complexity. It expresses tanginess of fresh citrus fruits (lime, grapefruit, yellow lemon), green apple and green pear, with a gourmet touch of fresh grapes and stone fruits (apricot, white peach). We also find a spicy and toasted touch (nutmeg, hazelnut), acacia honey, linden, good bitterness, notes of dried herbs and a mineral framework (limestone). The finish is persistent, fresh, tangy and chiseled. Beautiful acidity and structure, the bubbles are fine and silky.
