The wine has a pale lemon-yellow color. The nose is delicate, but concentrated and quite complex. The first nose is subtly perfumed and expresses minerality, associated with a fine spiciness. We find fine notes of limestone rock, a smoky touch reminiscent of gunflint, as well as notes of sweet spices (nutmeg, a touch of cloves and fennel seeds), wrapped in a beautiful fruity substance. On the second nose, we find aromas of fresh quince, quince jam, lemon zest, crushed green apple (even roasted), white peach, grapefruit, fresh bitter orange and orange jam, as well as flowers (dried linden, acacia, apple blossom), a herbaceous touch (fennel, thyme), as well as a hint of acacia honey in the background. On the palate, the wine expresses a lively tangy structure with a sharp and salivating acidity. It offers tangy flavors of fresh citrus (lemon zest, lemon juice, grapefruit), green apple, crisp green plum, white peach, as well as herbaceous notes (lemon thyme, verbena, mint), floral (fresh linden, apple blossom) and an expressive minerality (saline and limestone notes) on the finish, combined with a touch of fresh tea leaf.
