The wine has a pale lemon yellow color. The nose offers a certain concentration and complexity, as well as a fine spicy and yeasty hint in the background. It expresses the aromas of dried lemon peel, fresh lemon, lime, green apple skin, grapefruit, as well as tangy apricot. After aeration, the wine expresses aromas of honey and wax, as well as a fine floral bouquet (dried lime blossom, dried chamomile, a touch of acacia), fresh hazelnut, toasted notes in the background, as well as a perceptible limestone minerality. The palate is savoury, honeyed on the attack and in the mid-palate. It also expresses notes of crushed lemon, candied lemon peel, candied lime, a good bitterness of grapefruit, as well as flavors of tangy apricot and green apple pulp. We also find notes of dried flowers (lime blossom, chamomile, acacia), infused green tea, as well as fresh almond and fresh hazelnut. The toasty and woody notes are almost imperceptible (we find them in aromas of dried fruits and sweet spices – nutmeg, a very slight touch of cumin). The finish is slightly bitter and herbaceous, with a salivating and refreshing acidity. Good length and structure on the palate.
