Raoul Gautherin & Fils Chablis Grand Cru « Les Clos » 2022 – Chablis Grand Cru

The wine has a lemon yellow color of medium intensity, with light golden highlights. The nose is fragrant, floral and delicately woody. It first expresses notes of apple blossom, acacia, dried linden and infusion of chamomile in the background, associated with a touch of acacia honey, wax, coriander seeds, liquorice (a very delicate aroma which also recalls mint), vanilla (in the background, almost imperceptible) and toasted hazelnut, which brings sapidity. Then, we find notes of citrus (fresh lemon, lemon zest, a touch of grapefruit), stone fruits (apricot, yellow peach, yellow plum in the background) and quince. After aeration, we smell more honey, accompanied by a touch of vanilla yogurt. The palate is full, savoury and complex, with a round and silky texture. It expresses notes of toasted hazelnut, a light touch of toasted wood, vanilla, cumin seeds, honey, wax, as well as white flowers (dried linden, chamomile infusion, lily, acacia), citrus (dried lemon peel, lemon juice), green apple, fresh quince, white peach and tangy apricot. The finish is persistent, salivating, tangy and gourmand at the same time, with a good bitterness of grapefruit, which only appears at the end of the palate. We also sense notes of limestone, toasted wood, yellow peach and apricot with honey and thyme in the background, which bring a lot of gourmandise. A complex wine, very long and dense, which reveals itself gradually during the tasting.
