(100% Glera, grown in the Carpesica region, on clay-limestone soils of moraine origin). Fermentation with grape skins, 60% in barrels, 40% in stainless steel vats. Second fermentation in the bottle with native yeasts. Aging on lees for 24 months, in a vertical position, which prevents the wine from developing. The wine is produced only in magnums, not disgorged before sale, with no sulphites added after disgorging) The wine has a straw color of medium intensity. Very expressive, complex and aromatic on the nose. It expresses notes of dried green apple skin, dried green pear skin, fresh green apple and pear, as well as a fragrant floral bouquet – the aromas of dried chamomile, acacia, linden infusion. We also find the pronounced spicy aromas of dried vanilla and nutmeg, dominated by the note of saffron (characteristic for soils of moraine origin), as well as toasted brioche, bitter almond, dried lemon, grapefruit and a hint of petrol. The mouth is full, and very savoury. The attack is fragrant and also expresses a dominant touch of saffron, accompanied by various fruits (dried lemon, dried citron, fresh grapefruit, green apple, fresh green pear). We also find tertiary notes, more pronounced on the palate (dried tobacco, petrol, wax, chestnut honey), herbs and flowers (dried mint, linden, infused tea, chamomile), as well as a touch of nutmeg and hazelnut. The finish is enveloping, tasty, rich and very long, with a delicate bitterness and lively acidity.
