(biodynamic) The wine has a lemon yellow color of medium intensity. On the nose, we find subtlety, elegance, as well as a beautiful intensity of aromas. The wine offers notes of tangy and lively citrus fruits (lemon zest, grapefruit, lemon juice, a hint of blood orange), fresh quince, a subtle minerality (limestone) and refined and gourmet notes of aging – warm brioche, fresh butter, apricot yogurt, as well as touches of juicy white peach and a hint of vine peach in the background, combined with a hint of white flowers (dried wildflowers, linden) and honey flowers in the background. The palate is chiseled, tangy and precise. It expresses citrus flavors (yellow lemon zest, lime zest, blood orange, a pleasant bitterness of grapefruit), a touch of white peach and crunchy apricot, fresh butter, a touch of toasted bread, toasted brioche, as well as dried wild flowers (wild rose), wax and flower honey in the background. The finish is persistent and delicate, with subtle bitterness (grapefruit juice), refined minerality and lively acidity. Very fine bubble, silky on the palate. Elegance, beautiful complexity and tension.
