Pensieri di Cavatina 2021 – Chianti Classico

The wine has a ruby color of medium or even deep intensity. On the nose, the wine is reserved and needs to be aerated. It then expresses notes of morello cherry, black plum, wild strawberry, raspberry coulis, blueberry and crushed blackcurrant, combined with refreshing herbaceous notes (peppermint, fresh basil, fresh thyme, rosemary), as well as touches of iris and fresh olive. On the palate, the wine offers juiciness, grippy but fine tannins and a tangy fruitiness. It expresses notes of bigarreau cherry, raspberry, crunchy strawberry, wild plum, as well as peppermint, fresh basil, cut rosemary and iris. The finish is moderately persistent and expresses a salivating acidity and a delicate touch of candied cherry which balances the dryness of the tannins and a slight bitterness on the finish.
