Palladino, Barolo Parafada 2021 – Barolo

Palladino, Barolo Parafada 2021 – Barolo

The wine has a pale ruby color. The initial nose is fragrant and gourmand: it expresses toasted notes and roasted herbs, complemented by savory spices. We find in particular the aromas of toasted almond, heated wood in the background, chocolate, coffee, as well as liquorice, cardamom and tonka bean, as well as roasted thyme and rosemary. The fruity material combines notes of fresh fruits (morello cherry, red cherry, cranberries, raspberry, wild blackberry) and roasted fruits (roasted cherry, roasted strawberry). We also find a touch of smoke and roasted meat, as well as dried peppermint and an earthy mineral frame in the background. The palate is savoury, with an expressive attack, fruits (sour red cherry, cranberries, roasted red cherry, raspberry, blackberry, roasted strawberry) and a roasted hint with a good bitterness (toasted bitter almond, coffee), as well as a touch of tea with bergamot. Then, we find notes of spices (liquorice, grilled vanilla, cardamom, tonka bean), roasted herbs (roasted bouquet garni) and dried rose. The finish is juicy and savory, with a good bitterness and a salivating acidity, which balances the firm tannins.
