The foam is compact and reveals a beautiful intense straw gold color. The bubbles are fine, nice effervescence. The nose is fresh and intense on fruits with roasted pineapple, fresh apple, yellow peach but also woody notes. We smell toast and fresh vanilla. It’s aerial and intense. Little by little the citrus fruits appear like the tangerine. Apple and pineapple are increasingly intense. We have a minty freshness with a hint of honeysuckle. The mouth is saline and ample. We find toast, pine forest and especially rosemary and its flower. There is a nice freshness, a nice acidity, a good balance. We have aromas of fruits, herbs and balsamic notes. The palate is rather direct and big with a long and delicate finish. The fine bubbles accompany a nice salinity. The tasting ends with the plum stone and a hint of mushroom, very umami.
