The cava has a lemon yellow color of medium intensity. The nose offers delicacy and a tangy frame of ripe citrus fruits (lemon, grapefruit, blood orange), green apple, complemented by a honeyed and floral touch (acacia, apple blossoms). The autolytic nuance is delicate, but very present, slightly sweet (brioche dough, fresh bread, a hint of pastries). There is also a hint of hazelnut and vanilla in the background. The palate is generous, with a round attack, on a good bitterness of chestnut honey and ripe grapefruit. Then, it expresses the flavors of blood orange, green apple, crushed lemon and candied lime, complemented by a hint of honey, acacia and apple blossoms. The finish is generous, with a touch of tangy apricot and a sweet autolytic hint (brioche dough, pastries). Good length on honey and ripe citrus fruits, a touch of hay, with a refreshing acidity and a pleasant bitterness. The mousse is fine and enveloping.
