(organic, disgorgement: 15-07-2024) The cava has a lemon yellow color of medium intensity. The nose is expressive, with distinct notes of autolysis (warm brioche, bread dough, fresh yeast) dominating the first nose. Aromas of lemon zest, crushed lemon, grapefruit, green apple, as well as fresh quince, hay, dried white flowers (linden, chamomile). Later, a mineral hint of limestone and a note of dry earth appear. Aeration also reveals notes of honey and wax in the background. The palate is lively and tangy, with good bitterness of grapefruit and a tangy green apple edge on the attack. It then expresses notes of lime, yellow lemon, fresh quince, white flowers (lime blossom, chamomile) and green plum in the background, complemented by a mineral touch (limestone, dry earth) and a distinct autolysis side on the persistence (bread dough, fresh yeast). The acidity is lively and sharp. The finish is persistent and fresh. A chiseled, tangy cava, with a certain complexity.
