(organic) The wine has a ruby color of medium intensity, with light golden reflections. The first nose is tangy, tense and reserved. After aeration, it expresses notes of green apple, tangy pineapple, crunchy apricot, white peach, lemon juice, grated lemon zest and pomelo. We also find delicate notes of fresh wood and fresh hazelnut, associated with a floral bouquet (acacia, white lily, apple blossom), a touch of honey, as well as notes of candied lemon, fresh yeast (in stock), fresh bread and coriander seeds. The palate is savoury, with a fruity and gourmand attack (fresh green apple, roasted apple in the background, yellow peach, apricot), refreshed by lemony notes (fresh lemon, candied lemon, pomelo, citrus jam). It also expresses notes of apple blossom and acacia, associated with a hint of flower honey, even wax, fresh wood and fresh hazelnut in the background. In the (rather persistent) finish, we also sense spicy flavors of coriander seeds, vanilla, as well as yeast and vanilla yogurt. The finish offers a touch of apple roasted in honey, a refreshing acidity and a pleasant bitterness.
