(organic) The wine has a pale lemon yellow color. The nose is fragrant and gourmand, with expressive notes of yellow fruit at first (fresh yellow apple, yellow pear), which are then completed by notes of stone fruit (white nectarine, crunchy apricot), citrus (zest grated lemon, lemon juice, sweet pomelo), as well as a touch of fresh pineapple, a very subtle touch of fresh yeast in the background, fresh bread, flower honey, apple blossom and of acacia. We can see a very delicate herbaceous, almost minty touch in the background. The palate is gourmand, juicy and flavorful. In attack, it expresses notes of yellow apple, yellow pear, yellow plum, white peach and apricot, which are then completed by notes of apple blossom, acacia, a sweet and tangy touch of candied lemon, a lactic touch of natural yogurt and a touch of fresh yeast, combined with herbaceous notes of menthol, as well as a touch of vanilla and fresh wood in the background. The finish is moderately persistent, but tasty, with gourmand notes of honey, dried wildflowers and beeswax, combined with salivating acidity and good bitterness. A refined wine, with pronounced but pleasant notes of aging on the lees.
