Beautiful foam which reveals fine bubbles, nice effervescence. There is a nice clear and shiny gold color. The nose is on the fruit with fresh woody notes. We perceive touches of plum, dried apricot, yellow apple as well as a peppery side. It’s intense and fresh. We gradually perceive a hint of mirabelle plum and acacia honey. The palate is fresh, vanilla, woody and lightly toasted. The bubbles are fine, there is a herbaceous freshness and delicacy with a hint of gourmet vanilla. The mid-palate is more direct and straightforward. The long finish is ample and velvety with a hint of lingering umami.
