La Sibilla – Paloma – Brut nature

La Sibilla – Paloma – Brut nature

(Base 2022. Disgorgement: 01/2025) The nose is fruity and offers elegance, depth, lovely ripeness of fruit, gourmandise, a certain textured, precision and a fine creaminess in finesse/freshness. There are notes of quince, ripe citron and small notes of pulpy yellow peach, associated with touches of crunch white peach, as well as fine floral hints, sense of theplace (local biotop) and a hint of almost Timut pepper (in the background). The palate is well-built, fruity, balanced, precise and offers a tangy frame, energy, dynamism, depth, tension, sapidity, texture as well as an airy side in its creaminess. The effervescence is fine, bright and pure. On the palate, this wine expresses notes of citron, ripe Amalfi lemon and small notes of bright white peach, combined with touches of crunchy pear, fine hints of citrus, lemon cream, as well as fine hints of fresh almond. A subtle tannic hint in the aromatic on the finish/persistence. Gourmandise and a fine chewiness. A fine vinous side on the nose and palate.
