H. BLIN Parcellaire 100% Meunier – 2012

The foam is nice and persistent with fine bubbles. The champagne has a nice light golden color. The nose is powerful on the immortal flower but also on the bread crust. Gradually we perceive notes of candied orange, fine cocoa and almond. Still on the power, saffron and honey combine with pleasant notes of hay and dried mango. Complex, a nutty note takes over and you can smell a little bit of rosewood, tomato coulis, apple compote and dried rose petals. The palate is fresh and saline, evolved. The bubbles are fine and refreshing. We have an interesting woodiness on walnut, hazelnut and almond. There is also a nice minerality with a salty butter. Dynamic, this salinity continues on the finish with a touch of saffron. The end of the tasting encounters flavors of salted plum, almond, hazelnut biscuit and a hint of coffee. This validates the complexity and length of the finish with umami.
