The cava has a pale salmon color, tending towards orange, with numerous fine and regular bubbles. The first nose is expressive and aromatic, with gourmet notes of juicy fruits, which appear first (yellow raspberry, vine peach, yellow apple, apricot, a very light touch of white strawberry). Then we find a tangy frame of yellow lemon and grapefruit, as well as a sweet lactic side (raspberry yogurt, a hint of butter), a touch of toasted hazelnut and vanilla in the background, toasted bread and brioche roasted in butter, completed by a sweet side of pastry (lemon tart) and Viennese pastries. The palate is gourmet, with a fruity and juicy attack, even slightly sweet (white raspberry, white strawberry, apricot, white peach, yellow apple). Then, we find the acidity of lemon and a delicate bitterness of grapefruit, combined with notes of toasted hazelnut, vanilla, toasted bread, French toast, pastries and lemon curd. The finish is quite persistent, with a nice acidity, as well as a hint of honey and flowers. The mousse is subtle and very pleasant on the palate.
