Giró Ribot Uma Cava Brut Comtats de Barcelona Guarda Superior 2021 – Cava Gran Reserva

(30 months on lees): The cava has a pale lemon yellow color, with fine and regular bubbles. The nose is expressive, fruity and delicious on opening, with clean aromas of green and yellow fruits: green apple, yellow apple, green pear, Reine Claude plum, as well as white peach, apricot and fresh quince, combined with a tangy citrus frame (yellow lemon), notes of fresh yeast in the background, brioche, hay, a floral hint of chamomile and linden, as well as a lactic touch of peach and lemon yogurt. The palate expresses notes of autolysis on the attack (yeast, bread dough and a sweet, vanilla hint of brioche dough), which continues with tangy notes of citrus (lemon zest, crushed lemon), green apple, green pear, Reine Claude plum and tangy apricot, as well as a touch of toasted hazelnut and fresh hazelnut, chamomile and wax, which appear on the persistence. The finish is quite long, gourmand and tangy – it offers salivating acidity and flavors of crunchy apricot and peach. A chiseled and fresh sparkling wine.
