This Assyrtiko has undergone a 2-hour skin contact process as well as a fermentation in a mix of stainless steel, French, American oak barrels, and acacia barrels. This gives another dimension to the purity of Assyrtiko with notes of vanilla, smoke, and complex spices mix along the usual sea salt and stone value. An interesting take on this style.
