The nose is racy with concentration and a certain intensity, discreetly tight. There are notes of quince, zest and more slightly of mirabelle plum associated with touches of grapefruit zest, fresh yellow flowers as well as a hint of apple, beeswax, pastry, with a discreet hint. verbena and medicinal herbs. The palate shows juiciness, freshness, a fresh frame with minerality. There is tension, gourmandize, with bright fruit like juicy / pulpy lemon notes, tangerine and slightly pineapple associated with hints of zest as well as a hint of juicy apricot and fine notes of beeswax, toasted almond, walnut vinegar and subtle toasted hints. There is also toasted hazelnut, a discreet caramelization with dark chocolate in the background. Good length. Good job on the bitterness. There is a persistence on cider, walnut vinegar and zest.
