(organic) The wine has a ruby color of medium intensity. The nose is juicy, purely fruity at the opening. It expresses notes of juicy red cherry, wild raspberry, wild strawberry, garnet juice and cranberries, which are complemented after aeration by notes of fresh wood, toasted almond, liquorice, cardamom (even star anise in the background) and nutmeg. There are also notes of roasted bouquet garni, crushed black plum, wild mint and flowers (peony, fresh iris, a touch of lilac). The palate is tight, even closed on the attack. It expresses flavors of bird cherry with its tannic side and bitterness, tart red cherry, cranberries and raspberry, as well as a smoky and toasted touch in the background. Spicy notes of liquorice, cardamom, and black pepper are also present, combined with hints of chocolate-covered dried cherry and coffee on the finish. The tannins are firm and grippy, enveloped in a mouthwatering acidity. The finish is persistent, mouthwatering, dynamic, and tense, with a herbaceous (but not green) hint.
