(organic) The wine has a pale ruby color. The nose is gourmand, fruity, with complexity and concentration. It expresses notes of fresh fruit (morello cherry, blackcurrant, wild strawberry, crushed raspberry), with a touch of roasted fruit (roasted raspberry, roasted red cherry). There is also a toasted and gourmet chocolate side (toasted hazelnut, morello cherry in chocolate), coffee, toasted wood, as well as aromatic herbs (wild mint, sage, bouquet garni), liquorice, cardamom. After aeration, a floral touch of peony and violet appears. The palate is juicy, gourmand and quite fresh. The attack is fruity and expresses notes of red cherry, morello cherry, cranberries with a good bitterness, blackcurrant and raspberry. Herbaceous notes (mint, sage, rosemary), mint chocolate, toasted wood, and toasted hazelnut are also present. Tertiary notes of dried leaves, undergrowth, and tobacco appear on the finish, accompanied by a hint of dry stone minerality. The tannins have a fine texture but a tight structure. Good persistence on the palate, with toasted notes and a mouthwatering acidity.
