Domaine Vacheron Le Pavé 2022 – Sancerre

The wine has a pale lemon yellow color. The nose is reserved and tight, but dense and concentrated (it is better expressed after aeration). It then offers aromas of fleshy stone fruits (yellow peach, ripe apricot, yellow plum in the background), delicate and slightly sweet notes of vanilla, golden apple, pineapple and candied lemon peel. We also find elegant aromas of elderflower (or even elderberry syrup), apple blossom and acacia, a touch of fresh hazelnut and calcareous rock. The palate offers a round, silky and savoury attack (with notes of white peach, apricot and yellow plum in the background), but the mid-palate and finish are firm, lively and tangy (with flavors of lime, yellow lemon, green plum and green apple We also find the sweetness of elderflower syrup and the elegant scents of acacia and apple blossom. The finish is persistent, expresses a distinguished minerality (limestone, chalk), a good bitterness of lime and grapefruit, as well as a hint of flower honey and dried linden in the background.
