The wine has a pale lemon yellow color. The nose is fragrant and elegant, with a refined floral bouquet. The first nose offers notes of apple blossom, elderflower, dried lime blossom and chamomile infusion, combined with tangy aromas of grapefruit zest, candied lemon peel, lime zest as well as of green apple. After aeration, we also find aromas of crunchy apricot, white peach and a subtle minerality (limestone and slightly iodized), as well as honey, wax and fresh almond. The palate offers a floral and honeyed attack: we feel notes of acacia, apple blossom, dried lime and chamomile, associated with a sweet hint of flower honey and a sharp acidity of citrus and green fruits (lemon, lime, green apple), which brings structure and verticality to the wine. In the mid-palate, we find the racy minerality; limestone, saline, chalky and slightly drying. The finish is long and adds a good bitterness of lime and grapefruit, the juiciness of Reine Claude plum, as well as subtle notes of fresh almond, yeast and nutmeg. Beautiful complexity, persistence and accuracy.
